Our family LOVES easy shrimp and tomato salad combinations perfect as appetizers, brunch and alone as a salad. Shrimp doesn’t have to be expensive, although it can be depending on where you choose and can afford to buy it from. There’s nothing like fresh shrimp but honestly, you can buy bagged already cooked tail off and deveined shrimp in your local grocery store and it works for this delicious, healthy dish also!

We cleaned the shrimp and then added delicious grape tomatoes, some fresh scallions on top and usually we add some sliced up mini cucumbers too but didn’t have any on hand this time. Some family members love to drizzle olive oil on theirs, some love lite ranch dressing and we usually serve it up with no dressing so everyone can add their own, personally I love it plain just like you see it! Be creative, add your favorites to this easy dish idea.

This is a great brunch addition for Mother’s Day coming up, and really a great salad or appetizer for every day!
