Fall brunch trays are our favorite especially on the weekends. Actually brunch trays on the weekend every season are our favorite. Halloween may be over but Fall is still going strong. Even here in the south, as opposed to up north in NJ we may not be celebrating the beautiful colors of leaves changing but we are happy to welcome temperatures no longer in the lava degrees of 90’s (feels like 107°!), palm trees swaying with store bought beautiful Fall Mums placed under them, pumpkins and autumn displays in the garden and in the house and of course, baking and cooking everything pumpkin we can.

 

Brunch on our weekends whenever possible is a gathering of the family and a selection of easy to make, easy to eat, easy to clean foods that aren’t breakfast, lunch or dinner but a combination of whatever surprises and favorites we can fit on the tray.

Since it’s Fall, even though we are totally informal, it’s fun to start out with an autumn theme colorful tray (expensive is definitely not necessarily but a fun time to use the one you do have and hardly ever get to use!). Making it look great is half the fun. Eating is definitely the other half.

First a section of fresh strawberries, already cut up and ready to dig into and start eating. I added raspberries and blackberries for our berry lovers. Of course there is a side bowl for everyone filled with whipped cream (or cool whip other times) topped with some chocolate syrup. Seriously are you hungry yet this is so much fun.

I chose some amazing little banana flavored pancake puffs (mini pancakes would be great too), the best part about these are the powdered sugar I add to top them off.

This brunch tray I added some of my homemade amazing spinach pie, not really a quiche because it has no crust and not really egg based although it does have 2 eggs. I love my cheesy spinach pie recipe and so do both adults and kids. It’s healthy, low calorie and cheesy all at the same time.

Some cute Autumn leaves napkins I picked up go perfectly with the brunch and once I call everyone it’s ready, there’s no problem getting everyone around the tray.

Totally informal. Totally brunch. Totally gives us all a chance to sit together and just yak, share and enjoy some great food and memories together.
