Pumpkin and Fall are perfect together and no sweeter way to celebrate the season than Fall baking and cooking. Scents of pumpkin, cinnamon and brown sugar for at least two months straight and just so I don’t spend the whole time in the kitchen I always whip up and/or invent the easiest most delicious recipes possible. For me that means very few ingredients, a short cut or two and lots of creativity.
These pumpkin cookie cakes are so quick and so delicious be sure to make plenty because everyone will be wandering into the kitchen at all hours for “just one more cookie”.
Preheat your oven to 350 degrees. Gather your recipe ingredients along with a mixing bowl, cookie sheets and a spatula:
- 1 Box Of Cake Mix I Used Yellow Cake Mix
- 1 Can Of Pumpkin (not pumpkin pie filling!)
- 2 Eggs
- Mini Chocolate Chips
Place all the ingredients in the mixing bowl together and hand stir thoroughly until all the cake mix powder is totally gone. The batter will be on the thick side and that should make it easy to handle by spoonful or hand.
Since we love sprinkles and fall accents we rolled each cookie in orange black yellow sprinkles, fall leaves and purple and orange sugar crystals. Drop on to cookie sheets.
Bake at 350 degrees for 6 to 10 mins depending on the size of your cookies. Don’t burn them! Cookies always seem to be ready before they look ready and I’m famous for burnt bottoms!
Your home I promise will smell like Fall but these cookies really are a delicious easy treat all year round.
